carrot cupcakes with cream cheese frosting

New found love
Lets have fun and bake cupcakes 

Baking cupcakes and preparing the food become a valuable part of our shared family experiences,bring us together,nourishing our spirits as well as our bodies and brains.Ours is fun to make and deliciuos to eat. This is my new found love. I love having fun baking with my kids Aisyah,Ali and Azel ( my 3angles).We like to use simple recipe (i'm a beginner*v*).

Carrot cupcakes 
prep 25 min plus cooling and frosting
bake 20 min
makes 2 dozen
 
we need
2 cup all purpose flour
1 cup sugar
2 teaspoons ground cinnamon
2 teaspoons baking soda
4 eggs
1 cup olive oil
4 cups freshly shredded carrots
2/3 cups chopped nuts

preheat oven to 350F
1.In bowl 1:combine flour,sugar,cinnamon and baking soda.
   mix well.
2.In bowl 2:beat eggs with mixer until foamy,add oil in thin stream
   and beat well.
3.Add flour mixture  to eggs mixture,mix well.
4.Fold in carrot and nuts.
5.Spoon into baking cups.Bake for 18 min or until tooth pick
   inserted in the middle come out clean.cool cupcakes on rack.


Cream Cheese Frosting
prep   10 min
makes 21/2 cups

1 cup icing sugar
4 tablespoons butter,softened
1 package (8 oz) cream cheese,softened
2 teaspoons orange juice
1 teaspoon finely grated orange zest

In a mixing bowl,with mixer at low speed all ingredients until blended.Increase speed to medium high,frequently scraping the bowl with rubber spatula, beat until smooth and creamy. Put in the piping bag and ready to use.
